Halva
Delphic proudly sells Mezap Halva from Thessaloniki in Greece, still made today as it was 100
years ago.
The master-craftsmen collect the sesame pulp while taking care at the same time of the
production of caramel ("agdas"), the second basic ingredient of halva. The caramel is made in
special halva-making cauldrons with the care and yearning of the traditional recipe.
The sesame pulp is then hand-mixed with the caramel and with the other components (cocoa,
almond, pistachio, etc) determining its taste, then placed in special moulds. During the final phase, the halva is
packaged in the most modern packaging machines, which guarantee its freshness and taste,
then stored in suitable warehouses. Throughout the years, Mezap has managed to blend
development and modernization with the traditional, handmade way of producing halva, following
the same secret recipe until today.
Tahini
Tahini is produced from natural sesame seeds, which are hulled in special mechanical facilities with pure water.After that, the hulled sesame seeds, are roasted and then cleared from foreign objects until the desired purity is achieved.
Finally the sesame seeds are sent to the
milling process and ground with special millstones and the tahini is produced.
A complete, wholesome and natural food. A very good source of protein and calcium, free of chemical
additives and preservatives. Combined with honey, chickpea or eggplant puree it is a unique relish.
