Dry cheeses are normally semi-hard or hard, and are normally vacuum packed and with
refrigeration this is enough to keep them in good order.
Here in Australia we have replicated fetta style cheese in brine made from cow's milk.
It is one of the highest selling sectors of the cheese market in this country.
Delphic boast's a large range of brined cheeses firstly the "Delphic Star" brand and then the
Greek style "Yassou" (fetta). We carry these cheeses in a variety of packaging.
We also carry the traditional Cypriot cheese of Haloumi, made from cow's milk and perfect for
grilling or frying.
Imported Brined Cheeses
The most common is fetta . Delphic has the exquisite Greek fetta from the Epirus region of Greece,
together with similar white cheeses in brine of the fetta style from Bulgaria, Denmark and Romania.
The Greek fetta is made from sheep's milk, and comes in the normal mild variety or the more
tangier "piperati" style or the fantastic barrel fetta which has been matured in wooden barrels.
The Bulgarian and Romanian cheeses are well known in the market-place, as well as the Danish which
is actually made from ultra-filtrated cow's milk.
These cheeses come in a variety of packaging.
